I know Aptera is offering pet accessories for the back, but will there be a pet mode that keeps the interior at a safe temperature for our pets when we leave the car for a period?

Yes. Currently on line 329* of the FAQ spreadsheet, searchable with Ctrl+F (for "Find") or for Mac it's command+F.
