My own EV with 40% rear weight has plenty of rear-only braking traction for normal driving (tested with cable-activated handbrake).
Aptera's 30% rear weight could be increased by filling the rear parts of the battery compartment first. In other words, the 40-60 kWh packs fill the rear 40-60% of the space taken by the 100kWh pack. The latter would have a bit less % on the rear & if it's insufficient simply don't offer RWD-only with that pack.
